Happy St. Patrick’s Day!

While I probably only have a little bit of Irish in me (mostly English/Scottish/Welsh and German), it’s always fun to celebrate a holiday. Especially when you get to eat things like corned beef and potatoes. We’re not indulging in that this year, but we often do, and it’s so, so tasty, if you get a lean-ish cut of meat.

While I don’t like cooked cabbage, I love corned beef when it’s cooked with it. So we usually do corned beef, cabbage, potatoes, and carrots, and then it’s a pretty well-balanced meal.

Unless you also go to McDonald’s and get a Shamrock Shake (ahhh, taste of my childhood).
